About Us

What began in 2001 as a small French-style bakery has now become so much more. The Gourmet Tart Co. now has five shops in Galway, with staff of 70 people working hard to provide breakfast, lunch and take-home food seven days a week.

We have expanded both our sweet and savoury ranges to include lunches and quality take-home meals. Our French bakers work through the night to produce the finest croissants in town, along with a host of other baked delights.

Fintan and Michelle Hyland own and run the Gourmet Tart Co.Fintan and Michelle Hyland own and run the Gourmet Tart Co.

We were both born in Galway. Fintan grew up in Ballymore Co. Westmeath and we met in NUI Galway in 1990. After university we took a year out in Australia where we were really impressed by the food and the culture of casual dining. In 2001, after working as a chemist and a solicitor, we got married, gave up our jobs, and set up the Gourmet Tart Co. on a market stall in Limerick.

Ten years on we have 4 children, 1 market stall, 5 shops and a restaurant, and although we are very busy we are both very happy with the business and we really appreciate all of the customers who have supported us on the journey. We feel it is time to take stock of everything now and to expand our range - in particular our savoury range - and it is time to enjoy what we have built!
